Pickled Horned Melon with Dill

  • 300 grams Horned Mellon
    200 grams Water
    10 grams Salt
    200 grams Rice vinegar
    100 grams Mirin
    50 grams Sugar
    15 grams Dill

  1. Peel the horned melon and slice thinly (about 5mm).
  2. Combine water, vinegar, mirin, sugar, salt and dill.
  3. Mix well until the sugar and salt is dissolved.
  4. Combine the horned melon and brine and set aside to pickle for 2 hours.
  5. Drain and serve.

  1. How does the pickled horn melon taste? Could you give a description? I’ve never had it.

    1. It tastes just like cucumber, a little more subtle perhaps.
