Beef sosaties with fresh mint and coriander chutney

The story – Sosaties Revisited

Ingredients:

The Sosaties

  • 500 grams Beef sirloin
  • 500 milliliters Water
  • 15 grams Salt
  • 6 Juniper berries, Whole
  • 2 Bay leaf, Whole
  • 10 Coriander seeds, Whole
  • 10 Black pepper corns, Whole

The marinade

  • 500 grams Greek yogurt
  • 1 Green chilies, Chopped
  • 2 tablespoons Fresh coriander leaves, Chopped
  • 2 tablespoons Garam masala
  • 1 tablespoon Garlic, Chopped
  • 1 tablespoon Fresh ginger

The Chutney 

  • 2 cups Mint leaves, Chopped
  • 2 tablespoons Fresh coriander leaves, Chopped
  • 60 milliliters Lime juice
  • 3 tablespoons Spring Onion, Chopped
  • 2 tablespoons Green chilies, Chopped
  • 1 teaspoon Sugar
  • 1/2 teaspoon Salt

Directions:

1. Cut the beef into square chunks equal in size (about 3 cm each).In a large enough container the water, salt, and brine spices and whisk until the salt is fully dissolved. Add the meat to the brine and cover with lid or plastic wrap and place in the refrigerator for 24 hours or least over-night.

2. Mix all the ingredients for marinade in a bowl or container large enough to hold the meat. Remove the meat from the brine, discard the brine, and pat dry with a clean dish towel. Add the meat to the marinade and return to the refrigerator for a few hours, if your’e in a hurry or leave to marinade overnight.

3. Soak bamboo skewers in water for 15 to 20 minutes. Remove the meat from the marinade and wipe off all access marinade. Skewer four or five pieces of meat onto each skewer leaving enough space at the bottom end of the skewer for you to handle the sosaties. Grill the sosaties over hot coals or in a griddle pan, 2 to 3 minutes on each side until the meat is medium. Serve with fresh mint and coriander chutney (or dipping sauces of your choice) and some rice or flatbreads.

4. Add all the chutney ingredients to a food processor or blender. Process or blend for 15 to 20 seconds. Serve immediately.
