The Story

To Make the Cupcakes

25 grams Cocoa powder
50 grams Unsalted butter, diced
100 grams Caster sugar
1 Egg
85 grams Cake flour
1/2 teaspoon Bicarbonate of soda
1/4 teaspoon Baking powderDirections:
  1. Preheat the oven to 200℃. Arrange 6 cupcake paper cases in a muffin tray
  2. Pour 100 ml boiling water over the cocoa powder. Whisk until smooth and set aside to cool. Place butter and caster sugar in a bowl and using a food processor or hand whisk, whisk until pale. Incorporate the egg, dry ingredients, and cocoa mixture. Make sure the mixture is lump free. Spoon into the paper cases, filling each case about halfway. Bake in the oven for 17 minutes until the cakes have risen and are springy to the touch. Remove and leave to cool.

To make the Ganache:

100 milliliters cream
100 grams dark chocolate, chopped
  1. Place the chopped chocolate in a bowl.
  2. Bring the cream to the boil in a small saucepan.
  3. Pour hot cream over the chocolate. Stir to melt the chocolate.
  4. Set aside for a few minutes and stir again.
  5. The ganache should be thick and glossy.

To make the meringue:

2 egg whites
1/2 cup sugar
Pinch of salt
  1. Combine the egg whites, sugar and salt in a heat proof dish.
  2. Place over a pot of simmering water, and whisk for 5 minutes until the sugar has dissolved and the mixture feels hot when touched.
  3. Remove from heat.
  4. Whisk briskly for another 6 to 7 minutes until the mixture has cooled and stiff peaks have formed.

Assemble the cupcake in a jar:

Use a small jar with a wide mouth about the same diameter as your cupcake. Slice each cupcake in three portions equal in size. Place the first portion on the bottom of the jar. Pour over enough ganache to cover the cupcake and add one or two tablespoons of meringue. Place the second portion on top of the first. Cover with one or two two tablespoons of meringue. Cover with ganache. Place the third slice of cake on top. Cover with ganache and another table spoon of meringue.  Continue until the jar is full. Add a final scoop of meringue and finish with an Oreo cookie.
